Vegetables in oil
Ligurian cuisine is traditionally a vegetarian cuisine: the vegetables produced are of excellent quality. Therefore, on the Ligurian tables we can find an abundance of dishes based on zucchini, artichokes, eggplant, tomatoes, broad beans and asparagus. It is from the careful choice of the best vegetables of our land, processed with traditional methods, that our vegetables sottolio (in oil) come from, excellent as appetizers.
