The pandolce has distant origins, not only in time but also in space, given that according to the Genoese historian Luigi Augusto Cervetto (1854-1923) it derives from a Persian dessert based on dried fruit, pine nuts and candied fruit. It is not certain that Genoa really imported this recipe from the East, but there is no doubt that already in the eleventh century, the Genoese had come into contact with new foods and new preservation methods.
