Artisanal Durum Wheat Semolina Pasta from Organic Farming
The most traditional format of Liguria. In their ideal form, trofie—also known as troffie or trofiette—are small, elongated gnocchi with two twisted appendages.
They measure about four centimeters in length and originate as a typically fresh pasta, which is later produced in a dried version.
Trofie were made throughout the Genoa area and beyond, and being a home-made pasta, they took on many different shapes based on the needs, availability, and skills of the women who prepared them.
When talking about trofie, one cannot overlook their close relationship with pesto, a traditional sauce made from basil, garlic, aged cheese, pine nuts, coarse salt, and extra virgin olive oil.
The historical tradition of Genoese consumption of vegetables and greens led to the creation of a version with the addition of potatoes and green beans, resulting in a nutritious and healthy dish.
